2 1/2 to 3 lb. boneless corned beef brisket
3 stalks celery
2 medium onions, chopped

If desired:
1 lb. green cabbage
1 lb. red potatoes
6 to 8 small carrots

Directions:
Directions:
Cut 3 stalks of celery lengthwise and chop 2 medium onions and place them in a slow cooker. Top with corned beef, corned beef seasoning packet (if included) and 3 1/2 cups water. Cook on low for 9 to 10 hours or until brisket is fork-tender. Remove brisket; set aside.
Cut a 1-lb cabbage into 3-inch wedges and cut 1 lb of red potatoes into 2-inch pieces. Place cabbage, potatoes and 6 to 8 small, trimmed carrots in a microwave-safe dish along with 1/2 cup water and microwave on high for 15 minutes. Drain vegetables, add 2 T. melted butter and salt and pepper to taste. Carve brisket and serve with vegetables. Makes 6 to 8 servings.
