4 1/2 cups turkey stock (directions follow)
1 tsp. browning sauce
1/2 c. flour
1 tsp. salt
1/8 tsp. fresh ground black pepper
2 T. turkey drippings
chopped giblets, optional

Directions:
Directions:
In a bowl, blend 1 cup cold stock with flour until smooth. Heat remaining stock in large saucepan. Stir flour mixture into hot stock. Cook and stir over moderate heat until mixture thickens. Reduce heat, stir in remaining ingredients and cook 2 to 3 minutes more. Makes 4 cups.
Turkey stock: Combine giblets, 1 tsp. thyme, 1 tsp. chopped parsley, 1 carrot, 1 celery rib with leaves (chopped), 1/2 onion (quartered) and 1/2 tsp browning sauce. Cover with water; season. Simmer about 2 hours; strain. Reserve giblets.
Flavor variations: Stir in 4 tsp. minced onion or replace 1/4 cup stock with dry sherry and add 1 T. chopped parsley or add 1/2 cup drained, sliced mushrooms.
