2 cups cooked chicken
1 can cream of mushroom soup
3/4 c. mayonnaise
1 c. diced celery
1 c. cooked rice (may cook in chicken broth)
1 tsp. grated onion
1 T. lemon juice
1 c. chopped water chestnuts (or one can)
1/2 tsp.salt
3 hard-boiled eggs, finely chopped

Topping (optional):
1 c. crushed cornflakes
1 T. butter, melted
1/2 c. slivered almonds

Mix all ingredients together. Bake in a buttered 2 1/2 qt. dish at 350 for 25 minutes or longer. Put topping on last 15 minutes. If doubling recipe, mix together in a large bowl and bake in a 9x13 pan (or 4 qt.). If coming from fridge, a double batch takes 1 hr. to 1 hr., 15 mins. to bake.
