1 egg, separated
1 cup milk
1 cup flour
1 Tbls sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 Tbls olive oil

Directions:
Beat egg yolk and milk together. Sift together dry ingredients and add to the egg mixture. Add olive oil. Beat egg whites until foamy (this is the key to making the pancakes light) and then gently fold into the batter. Oil heated griddle. To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is perfect.

Pour batter onto hot griddle. Turn pancakes as soon as they are puffed and full of bubbles, but before bubbles break. Bake other side until golden brown

Variations: Drop ingredients, such as blueberries, m&ms, chocolate chips, or crushed Oreos (Charles’ favorite) onto batter after poured onto griddle. Word has it that Charles even likes to color his pancakes with food coloring.
