1 lb beef or calves liver, sliced 1/2 inches thick
2 T vegetable oil
2 T flour
1/4 t pepper
3 large yellow onions (about 1 lb), peeled, sliced 1/4 inch thick strips
3 green bell peppers (about 1 lb) seeded, sliced 1/4 inch thick strips
1 1/2 t salt
4 t cider vinegar

Directions:
In a large heavy skillet, heat 1 T of the oil over moderately high heat. Add liver, sprinkle with flour and pepper. Cook 2-3 minutes, turning once. When liver is just pink in the middle, remove to a platter and keep warm. Add remaining 1 T oil to the skillet, add onions, bell peppers and salt. Fry vegetables for 1 minute stirring constantly with 2 large spoons. Cover skillet, reduce heat to moderate, cook 2 minutes until veggies are crisp and tender. Return liver to skillet, add vinegar, toss over high heat, using spoons, 1 minute to heat and blend flavors. Serve and enjoy!
