1 lb ground beef
1/4 t salt
1/4 t pepper
2 (8 oz) cans tomato sauce (or 1 jar of favorite Spaghetti sauce)
1 1/2 C low-fat sour cream
1/2 C green onion, chopped
1/4 C less fat cream cheese softened
4 C hot cooked spaghetti (about 8 oz uncooked pasta )
1 1/3 C shredded cheese

Preheat oven to 350*
Saute mushrooms and garlic in olive oil. Set aside. Brown meat. Drain. Add salt, pepper, mushrooms & tomato sauce. Bring to a boil, reduce heat and simmer for 20 minutes. Combine sour cream, green onion, cream cheese and any choice of spices in a small bowl and set aside. Place spaghetti noodles in a 2 qt casserole dish covered in cooking spray. Spread sour cream mix over noodles. Top w/ meat mix. Cover w/ cheese, cover, and bake for 25 minutes. Uncover and bake an additional 5 minutes.
