1/2 lb bulk sausage
1 onion, chopped
1 1lb package frozen black-eyed peas
1 C raw rice
1 C water
Salt and pepper

Directions:
Brown sausage and onions. Add peas, rice, salt, pepper, and water: mix. As soon as this comes to a boil, turn down on simmer: cover and cook about 30 min.

-by Alyson; Mom used to make this every New Year’s; along with boiled cabbage (gross!). The cabbage was for “money”, the black-eyed peas were for “luck”.
