1 T olive oil
1 C peeled, chopped onion
1 t peeled, minced garlic
1 (8 oz) can tomatoes, drained, liquid reserved
1(8 oz) bottle clam juice
1(8 oz) can chopped clams, drained, liquid reserved
1 2 inch orange peel
1/4 t dried thyme leaves
1/8 t pepper
1/2 C chopped fresh parsley
1 lb fish filets, fresh or frozen, cut into 2 inch chunks

Directions:

In a sauce pot, heat oil over moderately high heat. Stir in onion, cook until soft, about 5 minutes. Add garlic and tomatoes, cook about 5 minutes longer, breaking up tomatoes with a spoon. Add clam juice, reserved liquid, orange peel, thyme, pepper, and 1/4 C of the parsley. Bring mix to a boil, then lower heat to moderate, simmer 15 minutes. Increase heat and let it come to a boil. Add clams and fish. Cook 5 minutes longer until the fish is white and flakey. Sprinkle soup with remaining parsley.
