2 egg whites
1/8 tsp salt
1/8 tsp cream of tartar
1/2 tsp peppermint extract
3/4 cup sugar
6 oz chocolate chips (1 cup)
1 crushed candy cane (optional)

Directions:
Directions:
Beat egg whites, salt, cream of tartar, and peppermint extract until soft peaks form. Add sugar gradually beating until stiff peaks form. Fold in chocolate chips, saving 24 chocolate chips to place atop cookies before baking. Place brown paper over a cookie sheet (note: clean, cut up grocery bags work well) and drop batter by the teaspoon, place one chocolate chip atop each. Optionally, you can also sprinkle cookies with crushed candy cane prior to baking. Bake at 300 degrees for 25 minutes. Cookies should not get brown. After 25 minutes may turn off oven and leave cookies in for 2-3 hours to make cookies less chewy.
