2 c. all-purpose flour
3/4 tsp baking soda
1/2 tsp. salt
1/2 c. Splenda Sugar Blend for Baking
1/4 c. margarine, softened
1-1/2 c. mashed banana (3 large)
1/2 c. Egg Beaters (or 2 eggs)
1/3 c. plain fat-free yogurt
1/2 c. semi-sweet chocolate chips

1. Preheat oven to 350º.
2. Combine all dry ingredients. Set aside.
3. Combine splenda and margarine in large bowl. Mix until well blended.
4. Add banana, egg substitute and yogurt to splenda mixture. Mix until well combined.
5. Add the dry ingredients and mix.
6. Place chocolate chips in a microwave safe bowl and microwave until just starting to melt. (I start with 1 minute on high and stir, then add 30 seconds more if need). Allow to cool slightly.
7. Add 1 cup of batter to melted chips and stir to combine.
8. Spray loaf pan with cooking spray. Spoon the two batters into the loaf pan, alternating between them. Swirl mixture with a knife.
9. Bake at 350º for 75 minutes or until wooden toothpick comes out clean. Cool on wire rack 10 minutes. Remove from pan and allow to cool on wire rack completely.
