1 c. oil
1 1/2 c. sugar
3 eggs
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. nutmeg
1 1/2 tsp. salt
2 jars junior size baby food carrots
1 c. chopped walnuts
8 oz. crushed pineapple - do NOT drain
1 c. coconut

1 large cream cheese (not low fat)
1 c. confectioners sugar
1 T. milk
1 tsp. vanilla

Put all ingredients in bowl and stir with wooden spoon. Pour into a greased and floured 9 x 13 pan. Bake at 350 for 50-55 minutes.

Mix frosting ingredients. Spread on cooled cake.
