6 ripe bananas, mashed
1 1/2 c. sugar
2 eggs
3 c. whole wheat flour
2 tsp. baking soda
2 tsp. baking powder
1 1/2 tsp. salt
2/3 c. oil (or substitute 1/3 c. applesauce)

Directions:
Directions:
Preheat oven to 350.

Mash the bananas and set aside. Beat sugar and eggs, then add mashed bananas. In a separate bowl, sift together flour, soda, baking powder, and salt. Add these dry ingredients to the banana mixture. Next, mix in the oil (or applesauce). Fill greased muffin tins 2/3 full.

Bake at 350 for 20 - 25 minutes.
