1 1/4 c. cake flour, sifted
1/2 c. granulated sugar, sifted
1 1/2 c. egg whites, (12) at room temperature
1/4 tsp. salt
1 1/4 tsp. cream of tartar
2 tsp. vanilla
2 tsp. almond extract
1 1/3 c. granulated sugar, sifted

Preheat oven to 375º.

Measure sifted cake flour into a medium sized bowl. Add 1/2 cup sugar and sift 4 times. Set aside. In a large bowl, combine egg whites, salt, cream of tartar, vanilla and almond extract. Beat until moist stiff peaks form. Add 1 1/3 cups sifted granulated sugar in 4 additions, beating constantly.

Gently fold the contents of the reserved flour/sugar bowl into the egg whites in 4 additions. Spoon the batter into an UNgreased, UNfloured tube pan. Bake at 375º for 35 - 40 minutes. Check for doneness using a skewer halfway between edge and center of pan.

To Make Chocolate Angel Food Cake: Add 4 T. cocoa and 1/4 cup more sugar

Sauce For Chocolate Angel Food: Caramelize 1 cup sugar and 7 T. water, stirring over medium heat until caramel colored. Remove from heat add 1 cup strong coffee. Cool. Add 2 T. whiskey. Serve over Chocolate Angel Food Cake and top with whipped cream.
