2 3/4 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
2 sticks salted butter, softened, no substitutions
1 1/2 cups sugar
1 egg
1 tsp. vanilla
3-4 T. buttermilk (plus buttermilk for dipping)
raw sugar (found in baking isle, usually in 2 pound boxes)

Preheat oven to 375 degrees. In a bowl, stir together flour, baking soda and baking powder. Set aside. Cream butter and sugar. Beat until fluffy. Add egg and vanilla. Beat well. Add dry ingredients and blend until mixed. Add 3-4 T. of buttermilk to make a soft, but not wet, dough. Scoop dough into balls. I use a small ice cream scoop. Dip tops of balls in buttermilk, then roll in raw sugar. Place on parchment paper lined cookie sheets. These cookies spread, so don't place too close together. Bake for 8-10 minutes, or until lightly golden.

You can also roll the dough in granulated sugar and then sprinkle with colored sugars. But, the raw sugar gives these cookies a wonderful, unique flavor!
