1/2 c. onion, chopped
1 c. celery, chopped
2 T. olive oil
13 oz. can creamed corn
1 c. water
8 oz. seasoned stuffing
3 egg yolks, slightly beaten
1/2 c. butter, melted

pepper and poultry seasoning to taste

Preheat oven to 375º.

In a large kettle, saute onions and celery in oil. Add creamed corn, water, pepper, and poultry seasoning. Bring contents to a boil for 1 minute. Remove from heat and cool. Stir in egg yolks and stuffing mix. Adjust by adding more stuffing, if too runny. Using an ice cream scoop to define portions, drop into a shallow, greased, muffin pans. Melt butter and pour a teaspoon across the top of each stuffing ball.

Bake for 15 minutes. Cool a few minutes in pans, then turn out onto serving platter. If holding to serve later, place stuffing balls in baking pan, and cover with foil to reheat.
