1 lb pork sausage, browned and drained
3 c. frozen hashbrowns, thawed
salt and pepper to taste
3 c. shredded cheddar cheese
1/2 c. green pepper, chopped
1/4 c. onion, chopped
12 large eggs
2 c. milk

Directions:
Directions:
Place potatoes in a 9 x 13 pan. Sprinkle with salt and pepper. Layer sausage, cheese, green pepper and onion. In a large bowl, combine milk and eggs. Pour over all ingredients in pan. For best results, let stand in the fridge overnight or for 8 hours. Bake at 350º for 50 to 60 minutes until edges are browned and middle is set.

You can skip a step by buying the hashbrowns with peppers and onion already in them. It tastes the same and is a lot less chopping.
