1 lb. tenderloin (good quality meat)
flour, salt, pepper to coat meat

2 T. peanut or olive oil
2 T. butter
1 c. beef stock
1 T. sour cream
8 oz. bottle blue cheese dressing
3 oz. block blue cheese
2 T. Parmesan cheese

Directions:

Trim fat from meat and cut in 1/4 inch slices. Dredge each piece in a mixture of flour, salt and pepper. In a large skillet, melt oil and butter together. Quickly sear meat pieces, turning to do both sides. When lightly browned, remove to a side dish. Do not clean skillet. Add beef stock and sour cream to the skillet and stir, mixing with the browned meat scrapings.

Lightly grease a 9 x 13 pan and line with beef pieces. Pour the sour cream skillet mixture across the meat. Top with some of the blue cheese dressing, crumbled blue cheese and grated Parmesan. Eyeball portions and adjust accordingly. At this point, the meat can be covered and held for several hours before serving.

To Serve: Broil until the top is slightly browned or bake in moderate oven (350º) until bubbling.
