2 cups yellow summer squash, cooked and mashed smooth
1 can Cream of Chicken soup, undiluted
1 cup sour cream
1 carrot, grated or processor chopped
1 pkg Pepperidge herb-seasoned crumbs. processed very fine
salt and pepper to taste
1 onion chopped

Directions:
Directions:
To the mashed squash, add soup, sour cream, carrot, onion, salt and pepper. Butter casserole dish, sprinkle layer of crumbs in bottom.
Add squash mixture. Cover with more crumbs and slice butter on top. Bake 350º
