20 oz. spinach; frozen, thawed, chopped
2 c. stuffing mix (processed fine)
1 c. Parmesan Cheese, grated
6 eggs
3/4 c. butter, melted

salt & pepper to taste

Preheat oven to 350º.

Drain the spinach and squeeze excess moisture onto paper towels until very dry. Lightly beat the eggs and mix in the remaining ingredients. Shape into balls and roll them about the size of walnuts.

Cover cookie sheet with saran wrap and place spinach balls on sheet. Freeze openly in freezer and then place in ziploc bag. Spinach balls can be frozen and stored until ready to serve.

Place frozen spinach balls on a cookie sheet line with parchment paper and bake for 10 minutes. Serve warm.
