"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
3 cups grated cheese (mild, sharp or extra sharp)
1 (8 oz) pkg cream cheese, softened
1 large jar chopped pimento, undrained
sugar
mayonnaise

Directions:
Directions:
Dump all together and beat in mixer bowl. Sprinkle some sugar on and add two or three tablespoons mayonnaise. Mix well. May need to add more mayonnaise, since it gets firmer when it gets cold. Also may add a bit more sugar if it tastes too strong. If desired, may add onion powder, garlic powder, or red pepper. Taste before removing from the mixer to see if it needs more sugar, mayonnaise, etc.
