PIE CRUST
1 ½ c flour (optl. 3/4 c whole wheat flour, 3/4 c white)
½ c oil
Pinch of salt
¼ c water

TOPPING
¾ c flour
¼ c sugar
¼ c brown sugar
1/3 c butter (soft)

PIE
5 ½ c apples
1 Tbsp. lemon juice
½ c sugar
¼ c brown sugar
¼ tsp. salt
½ tsp. cinnamon
¼ tsp. nutmeg
3 T flour

Directions:
Directions:
PIE CRUST: stir flour and salt together in pie pan. Bring oil and water up to boiling point, pour over flour, stir with fork and press.
PIE: combine all in bowl, mix well, pour into crust.
TOPPING: stir together with fork until crumbly, sprinkle over pie. Bake 40-50 minutes at 375.

Can top with caramel syrup.

You may have this recipe, Karis. It's from Jamie's mom--we made it in Missions Institute. It's my most asked for recipe--especially the oil crust. I use the crust for quiche, or anything that doesn't take a second crust. I'm pretty lazy.
