1 C Bulgur Wheat
2 C Boiling Water
2 Tomatoes, finely chopped
1 bunch Scallions, diced
1 C Parsley, finely chopped
1/4 C Lemon Juice
1/2 tsp Salt
1/4 tsp Black Pepper
1/4 tsp Oregano
1/4 tsp Cumin

Directions:
Directions:
Soak bulgar in water for 45 minutes to 1 hour. Drain well by pressing out excess water through a fine strainer. Add the rest of the ingredients and mix. Chill over night before serving.
