1 T Olive Oil
1 lg Onion, diced
1 Green Pepper, diced
1 Yellow Pepper, diced
3 Cloves Garlic, minced
1 1/2 C Rice, uncooked
28 oz Tomatoes, diced
2 C Broth
1/4 tsp Cayenne Pepper
1/2 tsp Black Pepper
1 Eggplant or Zucchini, diced

Directions:
Directions:
Saute onion, peppers and garlic in oil. Stir in remaining ingredients and heat to a boil. Reduce heat to low, cover and simmer for 30 minutes.
