2 Tbsp. olive oil (more if needed to coat bottom of pan)
1-2 tsp. lemon juice
1 clove garlic-minced
1/2 c. flour
salt&pepper to taste
2 Tbsp.scallions or shallots-minced
1 tbsp.fresh parsley (or 1/2 tsp.dried)
2 Tbsp. butter-melted
1# scallops-washed and patted dry

Directions:
Directions:
Dredge scallops in flour,shake off an excess.Heat oil in skillet-almost to smoke stage.Add scallops-toss 4-5 minutes, add scallions,melted butter and parsley.Cook additional minute,stirring gently.

A nice appetizer or dinner. Serve with polenta,a green salad, and lots of wine!
