2-3 POTATOES CUT INTO CHUNKS
1 GREEN PEPPER SLICED INTO LARGE PIECES
1 ONION CUT UP INTO LARGE PIECES
2 GLOVES OF GARLIC WHOLE
PARSLEY CHOPPED
TOMATO SAUCE (OR JAR TOMATO GRAVY)
OLIVE OIL
SALT PEPPER OREGANO
CHICKEN STOCK

Directions:
IN LARGE ROASTING PAN, SPREAD CHICKEN PARTS, TOP WITH GREEN PEPPERS, ONIONS AND GARLIC. PLACE POTATOES AROUND CHICKEN PIECES. SPRINKLE WITH PARSLEY, TOMATO SAUCE, A LITTLE CHICKEN STOCK, SALT, PEPPER, OREGANO. SPRINKLE OLIVE OIL OVER TOP.

PUT IN 400 DEGREE OVEN COVERED WITH FOIL AND COOK FOR HOUR
THEN CHECK TO SEE IF THERE IS ANY JUICE. IF SO, BASTE CHICKEN WITH IT.
COVER AGAIN AND COOK FOR ANOTHER HOUR, THEN BASTE AGAIN
IF CHICKEN AND POTATOES SEEM TO BE COOKED, REMOVE FOIL AND LET COOK FOR 15 OR 20 MINUTES TO BROWN.
NOTE: IF IT SEEMS TO GET TO DRY WHENEVER YOU CHECK IT ON THE HOURS, JUST ADD A LITTLE MORE CHICKEN STOCK
