1 can of Libbeys salmon
3/4 cup self-rising white corn meal
1/3 cup all-purpose flour
1 large egg
salt and pepper to taste
vegetable oil for frying

Directions:
Directions:
Mix flour, corn meal, salt, and pepper in a medium mixing bowl. Add salmon to dry mixture (make sure you check salmon for any bones) along with egg. Mix together well. Bring a heavy skillet (preferably cast iron) to medium heat and add oil. Using a large soup spoon, add mixture to hot oil and flatten to form a patty. Do not crowd pan. Allow patties to fry on both sides until brown and crispy. Serve with fried potatoes for dinner or with gravy and biscuits for breakfast.
