6-8 potatoes, cubed
1 cup celery, chopped
1 cup onion, chopped
1 cup carrots, shredded
1/2 cup butter
8-10 oz Velveeta cheese
2 Tbsp chicken base
2 Tbsp. parsley
1 1/2 tsp salt
1/2 tsp pepper
Cubed ham or cooked bacon
Broccoli (optional)
2 cups milk

Cook potatoes in just enough water to cover them. While cooking, saute celery and onion in butter until tender. Add to cooked potatoes (slightly drained) the rest of the ingredients and cook until bubbly. Add just enough milk to make it desired consistency.
