1 unbaked 9” pie shell (Pillsbury or homemade)
2/3 c. mozzarella cheese, shredded; divided
5 - 8 Roma tomatoes
1 c. fresh basil leaves, loosely packed
5 cloves garlic, minced
1 c. mozzarella cheese, shredded
2/3 c. mayonnaise
1/4 c. Parmesan cheese, grated
1/8 tsp. pepper

Preheat oven to 375º.

Place pie crust in pie pan and bake crust for 15 minutes. Remove from oven and sprinkle 1/2 c. mozzarella over shell. Let stand until cool. Meanwhile, slice tomatoes thinly, and lay on paper towels to drain. Arrange over crust. Pulse basil and garlic in food processor until coarsely ground. Sprinkle over tomatoes. Combine remaining mozzarella, mayonnaise, Parmesan and pepper. Spread over basil.

Return to oven and bake 30 - 40 minutes, until brown and bubbly. Cool slightly and cut into wedges.
