1 c. half and half
1/8 tsp. ground red pepper or cayenne
1/2 tsp. salt
3 - 4 Yukon Gold potatoes, peeled and thinly sliced
1 c. guyere cheese, shredded

Directions:
Directions:
Preheat oven to 350º.

Grease a 9 x 9 baking dish or 9 inch pie plate. In a medium saucepan, combine half and half, red pepper, and 1/2 tsp salt. Heat to boiling, stirring constantly. Add sliced potatoes and cook 2-3 minutes until half and half thickens slightly. Transfer half the potato/milk mixture into baking dish and sprinkle with 1/2 cup cheese. Repeat with remaining potatoes and cheese.

Bake for 30 - 40 minutes, until potatoes are fork tender and top is golden and bubbly.
