2 lb. russet potatoes, peeled and cubed
6+ slices bacon, fried and drained
1 c. onion, chopped
1/2 c. green pepper, chopped
2 tsp. garlic, minced
1 tsp. Emeril Essence
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Par boil the potato cubes in salted water, until just barely tender when fork tested ( about 8 minutes).

Meanwhile, fry bacon and drain. Leave grease in pan. Add onions and peppers and cook 4-5 minutes until golden. Add minced garlic. Add drained potatoes, Essence, salt and pepper. Cook, turning occasionally until potatoes are golden, about 6 minutes. Crumble bacon on top when serving.
