6 oz. yellow / saffron rice

DRESSING:
2 T. tarragon vinegar
1/3 c. olive oil
¼ tsp. salt
¼ tsp. dry mustard

INGREDIENTS:
1 lg. tomato, peeled and chopped
1 green pepper, chopped fine
1 c. cooked green peas
1 c.+ onion, chopped
1 c. celery, finely chopped

salt and pepper for seasoning
Optional: chicken or shrimp

Directions:
Directions:
Cook rice according to package directions, but stay light on added butter or oil. While rice is cooking, prepare the dressing.

To Mix Dressing: Whisk together all ingredients. When rice has finished cooking, immediately pour dressing over hot rice, and hold at room temperature 5 minutes. Add remaining ingredients and season to taste. Serve chilled or warm. May also add bite sized pieces of chicken or shrimp for a meal.

Note: Two good brands of yellow rice are Mahatma and Vigo.
