3 c. sweet potatoes, mashed
1 c. sugar
2 eggs
2 oz. bourbon
1/2 c. butter

TOPPING:
1 c. light brown sugar
1/3 c. flour
1/3 c. butter, softened
1 c. pecans, chopped

Directions:
Directions:
Scrub sweet potatoes and cut off woody portions. Quarter and cook in boiling salted water, without peeling. Drain and peel when cool enough to handle. Mash with a potato masher or fork. In a mixer, combine mashed potatoes, sugar, eggs, bourbon and butter. Mix until preferred smoothness, or mash by hand for "chunky" version. Transfer to greased casserole dish.

To Make Topping: Cream brown sugar, flour, butter and then add pecans. Sprinkle on top of mashed sweet potatoes, adjusting portion to preference. At this point, the casserole can be refrigerated overnight or frozen. Bake at 350 for 30 minutes.
