1 bunch spinach, washed and dried
1 red onion, sliced thin
1 sm. pkg. dried cranberries

CARAMELIZED ALMONDS:
3/4 c. slivered almonds, caramelized
2 T. sugar

POPPYSEED DRESSING:
1/4 c. salad oil
2 T. rice vinegar
2 T. sugar
1/4 tsp. salt
1/4 tsp. almond extract
1 T. poppy seeds

Directions:
Directions:
Prepare all salad ingredients in large bowl.

To Caramelize Almonds: Place 2 T. sugar in a saucepan over medium heat. Add almonds and stir constantly until sugar liquefies and almonds turn golden brown. Spread almonds on foil to cool, then break apart.

To Make Poppyseed Dressing: Mix all ingredients in blender. Drizzle over greens and toss just to moisten. Garnish salad with caramelized almonds before serving.
