16 medium shrimp, shelled and deveined
3 tsp. fresh lime juice
1/4 c. olive oil
1/2 tsp. sea salt
1/4 tsp. crushed red pepper
1 large pink grapefruit
1 tsp. Dijon mustard
1 head butter lettuce (bib)
1/2 c. arugula (or a 2nd lettuce variety)
1 avocado, peeled and cut in slices

Toss the shrimp with 2 tsp. lime juice, 1 T. olive oil, 1/4 tsp. salt, and red pepper. Marinate for 15 minutes. Thread shrimp onto skewers to grill, or place on sheet for broiling – about 1 minute each side.

To Assemble The Salad: Cut out grapefruit segments. Squeeze the juice out of the grapefruit shell. Strain and reserve 3 T. of juice. Set aside to use for vinaigrette.

To Make Vinaigrette: Whisk Dijon, remaining ¼ salt, remaining 1 tsp. lime juice and reserved grapefruit juice together. Whisk in remaining 3 T. olive oil.

Place salad greens on plates. Arrange shrimp, grapefruit segments and avocado slices on top of the greens. Drizzle with grapefruit vinaigrette. Serve immediately.
