DRESSING:
1 egg & 1 extra yolk
1/2 c. sugar
1/4 c. tarragon vinegar
1/4 c. water
1 1/2 tsp. cornstarch
1 tsp. dry mustard
3 T. butter
1/3 c. mayonnaise

SALAD:
4 c. broccoli, chopped
1/2 c. raisins
2 c. mushrooms
1/2 red onion, chopped
15 oz. mandarin oranges
1 lb. bacon, cooked and chopped

CARAMELIZED ALMONDS:
1/2 c. slivered almonds
3 T. sugar

Directions:
Directions:
To Make Dressing: Place egg, sugar, vinegar, water, cornstarch and mustard in a double boiler and cook until thick. Stir in butter and mayonnaise, then refrigerate.

To Make Salad: Pour cooled dressing on top of salad ingredients and refrigerate. Just before serving add caramelized slivered almonds.

To Make Caramelized Almonds: Place slivered almonds in saucepan with 3 T. sugar. Stir constantly until sugar caramelizes. Spread on foil to cool, then break apart. Garnish salad just before serving.
