1 c. canola oil
1/2 c. cider vinegar (use a little less)
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. sugar
1 can pinto beans with jalapeņos
1 can black-eyed peas (or frozen, thawed)
1 can white shoe-peg corn
1 green pepper, chopped
1 c. celery, chopped

Directions:
Directions:
Combine sauce ingredients. Bring to a boil stirring constantly. Cool. Add beans, peas, corn, pepper, celery and marinate in refrigerator overnight. Drain well. Serve with Frito Scoops.
