2 lb baking potatoes (russets), peeled and cut into 1/2 cubes
6+ slices bacon
1 c. onion, chopped
c. green pepper, chopped
2 tsp garlice
1 tsp. Emeril Essence
tsp. salt
tsp. pepper

Directions:
Directions:
Par boil the potato cubes in salted water, until just barely tender when fork tested.
Fry bacon and drain. Leave grease in pan. Add onions and peppers and cook about 4-5 minutes until golden. Add garlic. Add drained potatoes , Essence, salt and pepper. Cook, stirring occasionally until potatoes are golden, about 6 minutes. Crumble bacon on top when serving.
