1 pkg. active dry yeast
1 c. warm water (105-115 degrees F)
1/2 tsp. salt
2 tsp. olive oil (I use more)
2 1/2 to 3 1/2 c. flour
1 T. cornmeal

Directions:
Directions:
Dissolve yeast in warm water in warmed mixer bowl. Add salt, olive oil, and 2 1/2 c. flour. (If you have a stand mixer, use the dough hook, otherwise mix like you would any other dough.) Mix about one minute.

Add remaining flour 1/2 c. at a time. Mix until dough doesn't really stick to sides of bowl, about 2 minutes. Knead for about 2 minutes. (If using stand mixer, do speed 2 for 2 min.)

Place dough in greased bowl, turning to grease top. Cover. Let rise in warm place, free from draft, about 1 hour, or until doubled in bulk. Punch dough down.

Brush pizza pan with oil. Sprinkle with cornmeal. Spread out dough, forming a collar around edge. Add toppings. Bake at 450 for 15-20 minutes.
