1 (18 oz.) center-cut salmon fillet, about 9x4 in., skinned
1/2 c. flour
1/2 tsp. sea salt
1/4 tsp. pepper
3 egg whites
1 c. grated Parmesan cheese
1 c. seasoned bread crumbs
olive oil for drizzling

Preheat oven to 450 degrees.

Cut the salmon in strips, about 1/2 in. wide by 4 in. long. Try to cut them all the same size.

In one bowl, mix flour and salt and pepper. In 2nd bowl, beat egg whites. In 3rd bowl, mix the Parmesan and bread crumbs.

Coat the salmon strips in flour mixture, then dip in the egg whites, then coat that with the Parmesan mixture, you might have to gently pat the mixture on.

Oil a cookie sheet or baking pan liberally with the olive oil. Put the fish sticks on the pan and drizzle lightly with more olive oil. Bake for 15-20 minutes until golden brown.

*You can use any fish you like with this breading.

This is the only way we get our kids to eat salmon, they love these!

These are good dipped in ranch dressing, the kids like 'em with ketchup.
