1 - 2 1/2 to 3-pound chicken, cut up
2 tbsp cooking oil
1 1/2 C long grain rice
1 C chopped onion
2 cloves garlic, minced
2 3/4 C water
1 - 16 oz can tomatoes, cut up
1 cube chicken bouillon
1 tsp salt
1/4 tsp pepper
1/4 tsp saffron, crushed

Sprinkle chicken lightly with salt. In a 12-inch skillet brown chicken in hot oil about 15 min. Remove chicken from pan. In drippings remaining in pan, over medium/low heat, cook rice, onion and garlic till rice is golden. Add water, undrained tomatoes, bouillon, salt, pepper and saffron. Bring to boiling; stir well. Arrange chicken atop rice mixture. Cover and simmer 30-35 min or till chicken is tender.
