1 beef brisket
Onion salt
Garlic salt
Celery salt
Liquid smoke
Bottled barbecue sauce

Place trimmed brisket in glass or stainless cake pan. Generously salt both sides of brisket with onion, garlic, and celery salts. Pour approximately 2-3 tablespoons of liquid smoke over the brisket, depending on the size of the cut. Cover with plastic wrap and marinade in the refrigerator overnight or at least several hours. Remove plastic wrap and replace it with aluminum foil. Place in a 225º oven. Bake 3 to 4 hours or until tender when pierced with a fork. Uncover; pour barbecue sauce over the top, and continue cooking 45 minutes to 1 hour. Cool and slice thinly across the grain.

This was one of the recipes that Mother used to make, and it was always one of our family's favorites. The drippings make wonderful gravy by adding some cornstarch and milk or water. We like a thinner gravy for this dish.
