1 1/2 cups zucchini pulp (use blender)
3 eggs
1 cup oil
2-1/2 cups sugar
1 tbsp. vanilla
3 cups all-purpose flour
1 tsp. salt
1 tbsp. cinnamon
1 tsp. soda
1/4 tsp. baking powder
1/2 cup chopped nuts

Directions:

Beat together zucchini pulp, eggs, oil, sugar, and vanilla in large mixing bowl. Sift dry ingredients and add to the above mixture. Add nuts and beat well. Pour into 2 greased and floured loaf pans. Bake loaves at 325 degrees for one hour.
