4 small onions minced
1 green pepper sliced
1/2 lb boneless chicken breast chunked
1 can chopped tomatoes pureed
1 32 oz Ragu Spaghetti Sauce
1/4 c ketchup
1 clove garlic minced
1/4 t seasoned salt
1/2 t Beau Monde (or celery salt)
1/2 to 3/4 t oregano
1/2 t garlic salt
2 tsp worchestershire sauce
1/2 t Italian seasoning
1/2 t cayene pepper

Directions:
Directions:
Saute' chicken, onions and pepper in olive oil until chicken is done. While cooking, season meat with season salt, galic salt, beau monde, 1/2 t oregano, 1/4 t red pepper and some black pepper. Add tomatoes ragu, garlic and remaining seasonings. Simmer for 2 1/2 hours on very low heat. Stir occasionally and check for thickness. It may be necessary to add water while cooking. Sauce should be fairly thick. About 20 minutes before done, add mushrooms. Taste and correct seasonings. Serve over spaghetti.

If onions are particularly tart, adding some sugar may be needed. Can be made with ground beef instead of chicken.
