1.5 lbs. of ground round and/or ground turkey
2 cans of black beans
1 or 2 cans of corn (plain or Mexican style)
2 cans low sodium beef stock and 1 Knorr beef cube.
1 small can of chopped green chilies - medium or hot (depends on you)
1 to 2 cans petite diced tomatoes
1 can Rotell - optional
1 green pepper
1 small onion
1-2 tsp. cilantro

1 1/2 packages of taco seasoning mix--if you want you can use both... I just used 1 1/2

Brown turkey with onion, green pepper, drain. Put back into soup pot, add taco seasoning mix, and add 1/2 cup water and stir till mixed well. Add black beans, corn, stock, chopped green chilies, can diced tomatoes, and Rotell.

Stir together and cook-- I taste and if needed, I add some garlic powder, crushed red pepper flakes, salt and pepper. I cooked it for about 40- 60 minutes. You can serve this with grated cheese or a dollop of sour cream on top, or have it staight up. Serve with corn chips or Tostitos

I ordered Taco soup at a bistro here in town and thought it was good, but was lacking something. I played with what I thought was in it, and made it up. This is one recipe you can play with, and make it personal.
