5 tablespoons butter, softened and divided
1/2 cup chopped, toasted pecans
2 tablespoons minced onions
1 teaspoon lemon juice
1 dash hot pepper sauce
1/2 cup breadcrumbs
4 fillets fresh trout, about 1 1/4 lb. total

Place 4 tablespoons of the butter, pecans, onion, lemon juice, and pepper sauce in a blender or food processor. Process until well blended. Set aside. Dredge fillets in the bread crumb mixture. Melt remaining butter in a nonstick skillet large enough to fix the fillets in a single layer. Sauté for 2 minutes on each side or until browned. Transfer fillets to plates. Top each with 2 spoonfuls of the pecan butter mixture and serve!

I actually tried this recipe on rainbow trout caught in Alabama! There are only a few places where trout can survive in Alabama waters. One is in the cold water of the Sipsey Fork where it comes from the deep, cold depths of Smith Lake.
