4 lb single cut beef brisket
2 lbs carrots
3 lbs potatoes
1 can jellied cranberry sauce
1 can golden mushroom soup
1 package onion soup mix
1/4 cup ketchup

Directions:
Directions:
Set oven to 350º
In large roasting pan schmere 1/2 can of cranberry sauce
Place brisket on cranberry sauce and schmere the remaining cranberry sauce on brisket
Peel and slice carrots
peel and quarter potatoes
spread both around the brisket
combine golden mushroom soup, onion soup mix, ketchup and one can of water in mixing bowl.
stir and pour over brisket, carrots and potatoes
Cover with heavy aluminum foil or several layers of normal aluminum foil
Bake for four hours. Remove from oven.
Take the beef out of the pan and refrigerate for several hours. This makes it easier to slice. The meat has to be sliced against the grain or it will be too tough to eat.
