8 medium tomatoes
2 tbsp olive oil
8 c chopped onions
12 medium cloves minced garlic
4 celery stalks, diced
8 c sweet potato, diced
4 tsp salt
8 tsp paprika
4 tsp turmeric
4 tsp basil
dash of cinnamon
dash of cayenne
4 bay leaves
12 c water
4 medium bell peppers
4 cans chick peas

Heat olive oil in large soup pot. Add onion, garlic and sweet potato and saute over medium heat for 5 minutes. Add salt and saute for 5 more minutes. Add seasonings and water, cover and simmer for 15 minutes.
Add tomatoes , bell pepper and chick peas. Cover and simmer 10 more minutes.
Taste to adjust seasoning, check that sweet potato has softened, if they pass the test.
Serve and enjoy!
