3 roasted red peppers, seeded and chopped
1 1/2 c. (6 oz) crumbled feta cheese
8 oz. light cream cheese, softened
3 tbsp. finely chopped mint
2 tbsp. olive oil
1 tbsp. lemon juice
2 garlic cloves, minced

Directions:
Directions:
Combine all ingredients in food processor. Pulse until blended with some texture. Adjust consistency if desired by adding water, 1 tsp at a time. Season with salt and pepper to taste.
Cover and chill for 30 minutes. Serve cold with chips and veggies.
