1/2 cup uncooked rice
2 eggs
1/2 cup sugar
1 teaspoon vanilla
2 cups milk
butter
cinnamon and sugar

Directions:
Directions:
Cook rice according to package directions. Grease a 2-quart oven-proof casserole with butter. Break eggs into the casserole and beat slightly. Mix in sugar and vanilla. Add rice alternately with milk. Drop in about 2 tablespoons butter, cut into pieces, if desired. Sprinkle the top with a mixture of cinnamon and sugar. Bake at 350 degrees for about 1 hour or until pudding begins to set.
