1/4 c. Italian bread crumbs
1/4 c. grated Parmesan cheese
1/4 tsp. salt
1/4 tsp. garlic powder
1/8 tsp. pepper
2 c. skim milk
2 c. zucchini, sliced into 1/4" slices (about 2 small)

Directions:
Directions:
Preheat oven to 425. Lay an oven safe wire rack atop a baking sheet. Coat wire rack with cooking spray.

Mix dry ingredients in bowl and set aside. Dip zucchini slices in milk and then dredge in bread crumb mixture. Place on wire rack. Drizzle the coated zucchini with olive oil and bake for 30 minutes, or until brown.
